I remember that one of the biggest benefits of doing Whole30 before was getting much better sleep. I usually am boggled with insomnia but, after a little bit on the program, I was having the best sleep of my life. And I am anxious to get back to that.
And so last night, only my first night back on it, I had pretty good sleep. Exciting!
Otherwise, Day 2 started off pretty well. I met up with a friend for lunch at Hu Kitchen, an NYC eatery whose motto is “get back to human.” They serve food with no cane sugar, no soy lecithin, no refined sugar, no gluten, no emulsifiers and no GMOs.
February is Heart Health Month and, I don’t know about you, but I can’t help but seeing American Heart Association’s Go Red For Women information everywhere I turn. With heart disease being such an important topic in the Latino community, you can bet I’m noticing what’s being said – and one of the words of wisdom is coming from chef Ingrid Hoffman.

The fan of Latin food opened up about how she keeps a good figure (it’s easier than you think!), her secrets for portion control, how she keeps from over indulging – and when it’s okay to do so a little, the easiest way to incorporate more fruits and vegetables into our lives and her favorite go-to recipe for those nights when we all know that we’re too tired to slave away in the kitchen. Plus, I learned why she’s such a huge fan of Mazola® Cooking Oil, which has recently been found to be more effective in lowering “bad” cholesterol than the typical favorite extra virgin olive oil. This week was a very significant moment for me: a few days ago it was the five year anniversary of my gastric bypass. I can’t believe the crazy journey it has been, from losing 100 pounds to learning to eat new foods to getting a degree in health coaching to falling in love with cooking healthier.
Case in point: this week I went over to my friend’s apartment and made dinner. He absolutely loved the mahi-mahi and fresh kale salad with queso blanco that I prepared. I even lucked out because he happened to be in the mood for kale, so I definitely did good. The next thing on my list? Check out some healthy recipes and get to cooking more this year!
